Jollof Kingdom derived its name from the ancient Kingdom of Jolof (also known as the Wolof Empire) in the Senegambia region of West Africa, notably in parts of present day Senegal, Gambia, and Mauritania. By extension, the origin of Jollof Rice is traced to the people of Wolof (Jolof) who ruled this kingdom in the 15th century. In 1448, Portuguese traders introduced new goods, including tomatoes in the area which would become essential to the development of the dish. Jollof Rice is believed to have been an accidental creation by a cook at Portuguese trading posts near the Senegal River delta after a shortage of barley forced her to use rice for cooking. The dish, also referred to in Wolof as benachin or “one pot” in Senegal and Gambia, has spread to become one of the most common recipes across West and Central Africa, and beyond.
